Here's my current (Mar 2009) rig, dedicate to flight sim of roughly 2500 euro:

1. Asus P6T mobo, 6GB RAM DDR3-1600, 1x 1000GB SATA 7200 rpm HD
2. Intel Core i7 920 2.67GHz 8-core CPU
3. nVidia GeForce GTX 295 w/ 1800MB VRAM
4. Antec 900 case + 700W PSU
5. Two HP LP2475w 24” 1920 x 1200 monitors: 3840 x 1200 rez
6. Ubuntu Linux 8.10 64-bit edition.
7. Apple iPod HiFi
8. Thrustmaster HOTAS Cougare stick
9. Saitek Pro Flight Rudder

It gets me the following performance in X-Plane 9.22:
Setup: i7 920 2.66GHz, nVidia GTX 295, 6GB ram, Ubuntu 8.10 64-bit

XP 9.22 @ 1920 x 1200 res
Test 1
FRAMERATE TEST phase 1:time=30frames=6241 fps=208
FRAMERATE TEST phase 2:time=30frames=7097 fps=237
FRAMERATE TEST phase 3:time=30frames=8158 fps=272
